Keto Broccoli Salad

As the snow melts and the weather gets warmer, I start wanting lighter foods to get rid of that extra layer of fat I accumulated to keep me warm through the cold winter months. This salad is a tasty way to enjoy shedding those extra pounds without feeling like you’re missing out on the good stuff. Plus it’s healthy, but don’t say that too loud, it might scare people away. It is full of fiber, protein, healthy fats and an abundance of vitamins and minerals.
Did you know that broccoli has protein? 5 cups of broccoli has 13 grams of protein which is close to the same amount of protein as 4 slices of bacon which has 12 grams and they also have almost the same amount of calories. Could you eat 5 cups of broccoli in one sitting? It might be easier to eat the 4 slices of bacon. This salad recipe is for 4 people but there’s no judgment if you eat it all yourself. I’m a broccoli lover and even though I did share some with my sister, I plan on eating the rest myself. I admit, I have eaten 5 cups of broccoli in one sitting and had no ill effects from it, which means that I will probably do it again. Can a person turn green from eating a large amount of broccoli? If you see a green lady around town then know that she is not an alien but simply a broccoli lover.
This salad can be a meal in itself and is versatile. Add some chicken and then it suddenly becomes a chicken salad. It can also be served as appetizer or as a side dish and it would go over well at a potluck. Enjoy!
Keto Broccoli Salad
4 slices cooked bacon (leave out for vegetarian)
5 diced crimini mushrooms
5 cups raw broccoli florets cut into 1/4 inch pieces
1/2 cup sunflower seeds
1/3 cup chopped walnuts
1/2 cup Shredded Cheddar Cheese
The Dressing
1/4 cup Sour Cream
1/4 cup Mayo
1 Tbsp. Dill
1/2 Tbsp. Cayenne pepper (optional)
2 Tblsp. Lemon juice
